This is a recipe many will be excited to see posted. This again was from my first cooking class but instantly became a BIG hit. Black beans in a brownie, this can’t possibly taste good. Oh but they are amazing. I have made these for numerous cooking demos, parties, and handed out recipes to clients. They are so easy to make, all you need is a blender and an oven. That’s it! They are my favorite and sure to be yours!
Easy Black Bean Brownies
Ingredients:
1 (15.5 ounce) can black beans, rinsed and drained
3 eggs
1/4 cup of all-purpose flour (can use GF Bobs Red Mill One-for-One)
3 tablespoons applesauce
1/4 cup unsweetened cocoa powder
3/4 cup sugar
1 teaspoon vanilla
1/2 teaspoon baking powder
1 pinch salt
1/2 cup chocolate chips
Directions:
Preheat oven to 350 degrees and lightly grease an 8×8 pan with cooking spray. Place beans and eggs in food processor or blender and process until smooth. Add the next 7 ingredients, everything but the chocolate chips, and process until smooth. Mix in chocolate chips and pour in pan. Bake for 30-35 minutes or until a toothpick comes out clean.
Note: If doing in a mini muffin pan, bake for 20-25 minutes or until a tooth pick comes out clean.
